Old-Fashioned Farming Pays Off in South Australia’s Barossa Valley

A South Australian farmer is proving that old-fashioned, small-scale farming can thrive in today’s competitive agricultural landscape. Michael Waldand, based in Williamstown in the Barossa Valley, has transformed a modest 30-hectare property into a highly profitable and award-winning gourmet food operation. While the valley is renowned for its wine, it is Michael’s dairy and diversified farm that have become the real standout performers.

Michael’s passion for dairy farming began in childhood, inspired by the rhythms of a mixed farm he worked on during his school years. Despite scepticism from his family and the challenges of high interest rates when he purchased the farm at 23, he has remained committed. Today, his 50 Jersey cows produce milk valued at five times that of commodity milk, which is the foundation of his multiple value-added products.

A unique aspect of Michael’s operation is his use of milk to raise heritage breeds of free-range pigs, providing them with a rich diet that enhances the flavour and moisture of the pork. The pigs, along with a range of dairy products including butter, cream, and buttermilk, are sold through small-scale processors, farmers markets, and local restaurants. This approach supports other small producers and preserves crucial local processing facilities.

Michael also cultivates oyster mushrooms, adding further diversity to his farm’s offerings. Notably, he has collaborated with Vincenzo Lamontana, a former top Adelaide chef, to produce fresh Italian cheeses, bringing an artisanal touch to the farm’s produce.

Awarded the 2025 Harvey Norman Producer of the Year, Michael’s consistent delivery of high-quality, flavourful food is celebrated by chefs and consumers alike. His story exemplifies how dedication to small-scale, diversified farming can build a sustainable and satisfying future in agriculture. For Michael, farming isn’t just a job, it’s a way of life he loves to continue every day.
